A Special 4th of July Breakfast

Happy 4th of July! I hope you all have something special planned for the day!!

This morning I cooked my husband a breakfast of all his favorites... buckwheat pancakes (with ground flax seeds) with a blackberry compote drizzled on top, breakfast potatoes (made with cumin seeds, minced garlic, a little s & p, red and green bell peppers and onions), and a chocolate dipped strawberry for dessert.


I took this picture with my phone and it hardly does this plate of food justice- the colors just look weird! I also wish the blackberry juices would have stayed on top of the pancake instead of rolling off into the breakfast potatoes. Oh well, it may not look very pretty but at least it tasted great!

After breakfast, my husband worked for a few hours while I tidied the house and folded laundry. Then, we went to San Pedro to visit my father-in-law at the skilled nursing facility for 3 1/2 hours. It was a really nice visit- his mom was already there when we arrived so we got to spend time with her as well.

When we got home, I was feeling a little hungry so I decided to have some vegetable pasta salad and some 5 Grain Wheat Thins with Sabra roasted red bell pepper hummus. The salad was perfect, not too heavy but substantial enough to tide me over until dinner.



I'm not sure what we'll be having for dinner tonight. My husband has to work for the rest of the day, so I'm sure it will be something cooked indoors. Sadly, no BBQ's or parties for us this weekend. All work and no play for my hubby... I'm hoping he will be able to take a little break later on so we can watch the fireworks. For the last 10 years, my husband and I have watched the Queen Mary's fireworks from our deck and I don't want to watch them alone.
